Mini Nutella cakes recipe

You know how when you’re in the mood for something sweet, but just don’t have the energy to get dressed, go out and buy an entire cake/dessert and just end up eating spoon-feeding yourself from the good ol’ Nutella jar you have for emergencies like these. Well, I got you covered, I think 🙂

Here’s an easy and quick recipe that’ll definitely give you that sugar rush you’ve been craving, and with really basic ingredients.

This recipe was originally for a Nutella cake loaf, I thought this work even better as mini Nutella cakes, with a little twist 🙂 Here I am baking them and more details after the video.

Ingredients:

  • 1 & 1/2 cups Nutella
  • 5 tbsp butter (melted)
  • 2 eggs
  • 1/2 cup sugar
  • 3/4 flour
  • chocolate chips (optional)
  • Muffin tray

First you’ll need to heat the Nutella, over medium heat on the stove, or for 45 seconds in the microwave. If you do it in the microwave, make sure every single piece of aluminum seal is removed from the top of the jar.

  1. In your mixing bowl, mix the Nutella & the melted butter first, butter blends in.
  2. In a separate bowl, mix the eggs and sugar until smooth, then add to the Nutella mixture, and mix till smooth.
  3. Add the flour, and mix till it all blends together smoothly

Now your batter is ready to bake, start pouring it in the muffin tray holes equally, and top with the chocolate chips (quantity as preference), then add a tbsp of Nutella from the jar on top of each of the soon-to-be cakes.

Bake at 180°C/350°F for 40-45 minutes.

Let them cool off for 2 minutes, top it with some Nutella and serve warm as is, or you add a scoop of vanilla ice-cream with your choice of syrup (I’d go with caramel). I baked these for my 6-year old niece & nephew, and they LOVED it.
